Easy Lunchbox Savoury Muffins with DON Hungarian Salami

Ingredients

  • 2 cups self-raising flour
  • 2 tsp baking powder
  • ½ tsp smoked paprika
  • Pinch salt
  • 200ml milk
  • 100g butter, melted
  • 2 eggs
  • 1 tsp vinegar
  • 200g DON Mild Hungarian Salami, diced, plus extra for top of muffins
  • 4 spring onions, sliced
  • 150g comte (or gruyere), grated

Method

  1. Pre-heat oven to 180°C (160°C fan-forced). Line a muffin tray with paper cases.
  2. Mix the flour, baking powder, paprika and salt in a large mixing bowl. In a separate bowl, whisk together the milk, melted butter, eggs and vinegar. Add to dry ingredients and mix until just combined.
  3. Fold in the salami, spring onion and most of the cheese, leaving a large handful to sprinkle over the muffins later.
  4. Spoon batter between prepared cases and top with remaining cheese and some additional salami. Bake for 18-20 minutes or until they are golden and well risen. They can be served warm or cold.
  5. Accompany with a side salad for a substantial lunch, or pack into lunchboxes as is.
  6. Note: Muffins can be frozen and taken out as required each morning to fill lunchboxes. Add some additional ingredients like chopped cherry tomatoes, mushrooms or capsicum.
