Baked Ham With Orange & Pomegranate Glaze

Ingredients

  • ¾ cup brown sugar
  • ¼ cup orange juice
  • ¼ cup pomegranate molasses*
  • 2 tsp honey
  • 2 strips orange rind
  • 1 cinnamon stick
  • 1 whole star anise (optional)
  • 1 sprig thyme
  • 5kg DON Leg Ham

Method

  1. For the glaze, combine all of the ingredients in a small saucepan. Bring to a gentle boil, stirring until the sugar dissolves. Reduce heat and simmer for 4-5 minutes. Set aside.
  2. Pre-heat oven to 180°C (160°C fan-forced). Prepare ham, by removing the netting and patting dry with paper towel. Place into a large oven tray lined with baking paper.
  3. Brush ham all over with some of the glaze and bake for 1 hour. Baste generously with the glaze every 15-20 minutes. Once cooking is complete, set ham aside and allow to cool. Serve warm or cold.
  4. Serve sliced ham garnished with oranges, pomegranates and fresh herbs. Accompany with your desired salads or vegetables. *Pomegranate molasses is readily available at your local supermarket
