La Scala Salami Salad

Ingredients

  • ½ head iceberg lettuce, shredded
  • ½ red onion, thinly sliced
  • 200g chub salami, skin removed and dice
  • 1 × 400g can chickpeas, drained and rinsed well
  • 1 tomato, diced

  • Dressing
  • 1 tbsp Dijon mustard
  • ¼ cup freshly grated parmesan
  • 2 tbsp cup red wine vinegar
  • 3-4 tbsp extra virgin olive oil
  • 1 tsp of dried oregano
  • Salt and pepper

Method

  1. For the dressing whisk all the ingredients together in a large salad bowl.
  2. Add the tomatoes, lettuce, onion, salami and chickpeas, and toss everything together. Eat immediately.
