Family Lunchbox Favourites: Easy Gourmet Ham Cheese Sandwiches + Savoury Salami Muffins

From a new twist on a ham and cheese sandwich featuring DON Double Smoked Leg Ham, to savoury muffins packed with DON Mild Hungarian Salami, there is something for everyone to enjoy, including even the fussiest little ones!

Ingredients

  • Adult Sandwich
  • 2 slices sourdough bread
  • 1 tbsp aioli
  • 4 slices of DON Double Smoked Leg Ham
  • 2 slices cheddar or Swiss style cheese
  • 1 pickled chilli, chopped
  • 1 egg, fried
  • 1 tbsp caramelised onion relish

  • Kids Sandwich
  • 2 slices sourdough bread
  • 1 tbsp aioli
  • 4 slices of DON English Style Leg Ham
  • 2 slices cheddar cheese
  • 50g cucumber, sliced

  • Aioli (for both Sandwiches)
  • 3 tbsp mayonnaise
  • 2 garlic cloves, roasted
  • 1 tbsp lemon juice
  • Pinch salt

  • Savoury Muffin
  • 2 cups self-raising flour
  • 2 tsp baking powder
  • ½ tsp smoked paprika
  • Pinch salt
  • 200ml milk
  • 100g butter, melted
  • 2 eggs
  • 1 tsp vinegar
  • 200g DON Mild Hungarian Salami, diced, plus extra for top of muffins
  • 4 spring onions, sliced
  • 150g comte (or gruyere), grated

Method

Adult Sandwich

  1. Spread one piece of bread with aioli, top with ham, cheese and chilli.
  2. Then add the freshly cooked fried egg.
  3. Spread the other piece of bread with relish and combine the slices to make your sandwich. Enjoy.
  4. *You could also toast this sandwich, simply butter the outer sides and add to a pre-heated frypan or to a sandwich press, cooking until golden. Add a handful of rocket also if you choose.

Kids Sandwich

  1. Spread one piece of bread with aioli.
  2. Top with ham, cheese and cucumber.
  3. Top with the other slice of bread, cut into two and enjoy.

Aioli (for both Sandwiches)

  1. Combine all ingredients together and mix well. Store in the refrigerator until required.

Savoury Muffin

  1. Pre-heat oven to 180°C (160°C fan-forced). Line a muffin tray with paper cases.
  2. Mix the flour, baking powder, paprika and salt in a large mixing bowl. In a separate bowl, whisk together the milk, melted butter, eggs and vinegar. Add to dry ingredients and mix until just combined.
  3. Fold in the salami, spring onion and most of the cheese, leaving a large handful to sprinkle over the muffins later.
  4. Spoon batter between prepared cases and top with remaining cheese and some additional salami. Bake for 18-20 minutes or until they are golden and well risen. They can be served warm or cold.
  5. Accompany with a side salad for a substantial lunch, or pack into lunchboxes as is.
  6. Note:
    Muffins can be frozen and taken out as required each morning to fill lunchboxes.
    Add some additional ingredients like chopped cherry tomatoes, mushrooms or capsicum.
