
La Scala Salami Salad

Ingredients
- ½ head iceberg lettuce, shredded
- ½ red onion, thinly sliced
- 200g chub salami, skin removed and dice
- 1 × 400g can chickpeas, drained and rinsed well
- 1 tomato, diced
- Dressing
- 1 tbsp Dijon mustard
- ¼ cup freshly grated parmesan
- 2 tbsp cup red wine vinegar
- 3-4 tbsp extra virgin olive oil
- 1 tsp of dried oregano
- Salt and pepper
Method
- For the dressing whisk all the ingredients together in a large salad bowl.
- Add the tomatoes, lettuce, onion, salami and chickpeas, and toss everything together. Eat immediately.
